Once scorching hot, put chuck roast in pan and sear on all sides until brown. Salt and pepper while searing. Once seared, add to crock potDice onion, poblano and serranno pepper and add to crock pot along with can of enchilada sauce. Cook on low for 8hrs.Once chuck roast is finished, warm refried beans according to directions on can. Spread a thin layer of beans in a tortilla, top with shredded pieces of chuck roast and roll up. Place in baking dish and repeat with the remaining tortillasOnce all tortillas are finished. Top with some of the sauce from the crock pot and a good amount of colby cheese.
