Heat oil in a saute pan until hot and cook ground beef until brown. Drain out excess fat and combine with two cans of pasta sauce.Combine ricotta, egg and chopped parsley in a bowl together.If using fresh pasta, begin rolling out and cutting the dough to fit the 13x9 baking pan. Rolling out to the second from thinest setting on a pasta roller. If using boxes pasta, cook pasta until just shy of being done.Put 1/3 of the meat sauce on the bottom of the baking pan, top with noodles and then 1/2 of your ricotta cheese and 1/3 of your mozzarella and parmesan. Top cheese with noodles and then sauce and repeat until you get to the last layer of cheese on top.Place in oven, covered with foil, for 25 minutes and then remove foil and cook for another 20-30 minutes.
