Twice Baked Potatoes

Ingredients

• 4 large russet potatoes
• .5C sour cream
• .5C milk
• 2T butter
• 1T heavy cream
• 1C cheese
• 4 strips bacon

Equipment

• Baking sheet
• Large bowl

Instructions

1. To begin, rinse and dry potatoes. Place on a foil lined baking sheet and bake in an oven set to 400 for around 1hr or until cooked. The potatoes should give a bit when squeezed.
2. While baking, fry some bacon and set aside on paper towel to drain. Chop into small pieces.
3. Remove potatoes from oven and let cool until they can be easily handled without being burned. Slice in half and scoop insides into a bowl along with sour cream, milk, butter and heavy cream. Mix together before adding in cheese and bacon (if desired).
4. Scoop mixture and place back in to potato "boats" on the foil lined baking sheet. Top with some additional cheese and bacon and bake in oven for 10-15 minutes. Enjoy!
