Top with salt and let sit for 2-3 minutes before pressing between paper towel to draw out moisture. Repeat with pickles and set aside.In a bowl add flour, second bowl add two eggs whisked and third bowl add panko breadcrumbs. Dip each piece of zucchini in flour on both sides, into the egg to be covered on both sides and finally into the panko to be covered on both sides. Side aside and repeat with all slices of zucchini and pickles.Gently lower a handful of breaded zucchini or pickles into the oil and fry for 3-5 minutes, flipping half way, until golden brown.
